Macaroni is a type of pasta that is commonly used in a variety of dishes. However, you can replace it with other pasta options such as penne, fussili, or rigatoni. Macaroni is typically used to make dishes such as pasta, kheer, and salads.

Macaroni is a type of dried pasta that resembles a curved tube. The specific type of curved tube used in this recipe is elbow macaroni, while the other type is a narrower tube. However, the most commonly found variety in this area is elbow macaroni.

I enjoy incorporating Indian spices into pasta dishes, and my family’s top pick is this curried Macaroni Pasta. It features a simple curry sauce made with onions and tomatoes, which is then mixed with cooked pasta. This recipe has a medium level of spiciness, making it suitable for children as well.

I did not include cheese or cream to achieve a creamy and indulgent texture, but you may add them if desired. Please refer to my variations section for this. I have utilized traditional Indian spices such as red chili powder and garam masala powder, along with mixed herbs.

I utilized my Dutch oven to prepare this pasta dish. Any pot with a sturdy bottom can be used for this recipe. Serve while hot!

  • For this recipe, it is recommended to use Macaroni Pasta, but any type of pasta can be substituted.
  • I incorporated onion, tomato, capsicum, and carrots in this recipe. You could also include mushrooms, cooked corn, baby corn, or any other vegetables of your preference.

  • Spices & Herbs – Indian spice powders like red chilli powder, garam masala powders are used. Additionally mixed herbs and coriander leaves are used.

  • To begin, make sure to cook the pasta correctly. It should not be overly soft or al dente, as I suggest cooking it until it is tender for most recipes to prevent any digestion issues.

  • Including the water used to cook the pasta can prevent it from becoming too dry.

  • Include a variety of vibrant vegetables to enhance the appearance and flavor of Macaroni Pasta.

  • If the mixed spice curry is delicious, there is no need for any extra decoration. I don’t even include cheese as a topping, yet the children still enjoy it greatly.

  • To enhance the taste, a small amount of curry masala powder can be included. Additionally, if you have maggi masala powder, it can also be added.

  • The Macaroni Pasta should be moist and succulent, rather than dry. Adjust the consistency as needed.

Step by step instructions for making macaroni pasta.

In a large pot, boil 4 cups of water. Have all of your other ingredients prepared.

Once the water reaches boiling point, add 1 teaspoon of oil and salt. Allow it to continue boiling.

Add one cup of macaroni pasta to the mixture.

Stir quickly.

Cook until the pasta is easily pierced with a fork. This may take 5-6 minutes, depending on the type and size of pasta. Set aside 1/2 cup of the cooking water for later.

Remove excess water and set aside.

Rinse the item with cold water to halt the cooking process.

In a pan, heat oil and add 1 teaspoon of minced garlic and 1/2 teaspoon of finely chopped ginger. Cook for a minute until they turn golden.

Next, include 1/2 cup of finely chopped onion and salt to the mixture.

Cook until translucent and golden.

Combine 1 cup of diced tomatoes (equivalent to 2 medium-sized ones), 1/4 cup of chopped bell peppers, and 2 tablespoons of finely chopped carrots.

Cook the tomatoes until they become soft and the strong smell dissipates.

Cover and cook for a few minutes or until the vegetables become slightly soft.

Add 1 tsp of red chilli powder, 1/2 tsp of garam masala powder, and 1 tsp of mixed herbs.

Sauté quickly.

Mix in 1 tablespoon of tomato sauce and 1/2 cup of water from the cooked pasta.

Stir the mixture quickly and allow the sauce to boil for one minute.

Mix thoroughly until the spices are evenly distributed.

Include 1 teaspoon of diced cilantro. The noodles should not be lacking moisture.

Expert Tips

  • Remember to save some of the water used to cook pasta and mix it into the curry before adding the pasta. This will thicken the sauce and prevent the pasta from becoming dry.

  • To ensure the masalas are fully absorbed, make sure to cook the pasta until it is soft. If the pasta is not soft, it will not absorb the masalas completely.
  • Ensure that the spices are increased, as the pasta will be perfectly seasoned after being added and mixed.

  • You have the option to top your dish with 2 tablespoons of cheese. You can choose between Parmesan or cheddar cheese.

  • Include 3 tablespoons of mayonnaise to the sauce for a creamier consistency.

Storing & Serving Suggestion

  • Either serve it hot or serve it with a side of toast.

  • My suggestion would be to consume it while it is fresh. If you wish to store it, prepare the sauce separately and keep it in the refrigerator. Then, mix it with the pasta when serving.
