Tender coconut pudding is a delicious dessert made using tender coconut water and flesh as main ingredients. It’s a popular dessert in some tropical regions and is loved for its creamy and mildly sweet taste.

In Tamil, tender coconut is referred to as Elaneer. It serves as a natural coolant for the body and is especially refreshing in the summer. Tender Coconut Pudding is famous for its distinct coconut taste and the special texture created by the tender coconut meat. The addition of condensed milk gives this dessert a creamy and indulgent touch, and the level of sweetness can be adjusted to personal liking.

Ingredients

  • Tender coconut – I used 2 whole tender coconuts for this recipe. Both tender coconut water and tender coconut pulp are used for this pudding.
  • Whole milk is boiled and then used as an ingredient.

  • To enhance the sweetness, sugar and condensed milk are included.

  • Agar agar powder is utilized as a setting agent in this pudding.

Step by step instructions for making a delicious tender coconut pudding.

Add 1/2 cup of tender coconut flesh and a small amount of tender coconut water to a blender and blend into a puree.

Blend it until smooth and set it aside.

3. Pour 1 cup of boiled whole milk into a saucepan.

Mix in 3 tablespoons of sugar.

Mix 1/2 cup of condensed milk into the mixture.

Mix thoroughly. Cook for a brief 2 minutes, then turn off the heat and let it rest.

Next, in a separate saucepan, pour in 1 cup of tender coconut water.

Mix in 1 and 1/2 teaspoons of agar agar powder.

Mix it thoroughly until it is fully dissolved.

Bring it to a boil.

Stir quickly and turn off.

Include fresh coconut pulp to the mixture.

After this, whisk the pudding quickly as it will begin to set.

Pour the mixture quickly into pudding molds or any bowl that can withstand heat.

Place it in the refrigerator for at least one hour.

Cut around the perimeter with a knife and then flip it over to remove it from the mold. If needed, you can also submerge the base of the mold in warm water to aid in the demolding process.

Expert Tips

  • I attempted to make the same pudding with agar agar strands, but it did not set properly. Therefore, I have substituted agar agar powder in this recipe.

  • To achieve a more wobbly pudding consistency, incorporate 1 and 1/4 teaspoons of agar agar powder.

  • I did not add any additional flavorings to this recipe as I wanted the pure taste of tender coconut. However, if you prefer, you can mix in 1/2 teaspoon of cardamom powder into the pudding.

  • To incorporate agar agar strands, include 10 grams in this particular recipe. Soak the strips in tender coconut water and warm them to aid in dissolving.

  • I chose not to filter the agar agar mixture because it dissolves quickly. However, if using agar agar strands, it is recommended to strain and add them.

Serving & Storing Suggestion

Coconut Pudding can be enjoyed on its own as it has a delicious flavor.

This dessert can stay fresh at room temperature for one day, and an additional day in the refrigerator. Because it contains delicate coconut as the main ingredient, I do not recommend storing it for longer than that.

FAQS

Is it permissible to use agar agar strands?

Agar agar strands can be used as a substitute for agar agar powder, but in my experience, the pudding does not set as well with strands as it does with powder. However, the taste is still good.

Can tender coconut pudding be considered a healthy option?

As tender coconut is fresh, natural and healthy the pudding not only taste good but has a lot of health benefits too.

  • In a mixer, combine 1/2 cup of tender coconut flesh with a small amount of tender coconut water and blend until it becomes a puree.

  • Blend it until smooth and set it aside.

  • Pour 1 cup of boiled whole milk into a saucepan.

Notes

  • I attempted to make the same pudding with agar agar strands, but it did not solidify as well. Therefore, I am using agar agar powder in this recipe instead.

  • For a firmer pudding consistency, you can incorporate 1 and 1/4 teaspoons of agar agar powder.

  • I did not add any additional flavoring because I wanted the pure taste of tender coconut. However, cardamom powder pairs well with this pudding. If desired, you can add 1/2 teaspoon of cardamom powder.

  • I did not filter the agar agar mixture since it dissolves easily. If using agar agar strands, it is best to filter and then add.

  • To incorporate agar agar strands into the recipe, add 10 grams to the mixture and allow the strips to dissolve.
